Abstract. The effect of storage on isothiocyanates in horseradish roots and processed horseradish was studied. The higher root diameter the lower content of isothiocyanates was found in horseradish grown in Poland. Concentration of isothiocyanates in horseradish roots and processed horseradish was also affected by the period and temperature of storage.

The effect of storage on isothiocyanates content
of horseradish

Summary

The influence of storage on isothiocyanates in horseradish roots and processed horseradish was studied. Content of isothiocyanates in horseradish depends on root diameter. The higher root diameter the lower content of isothiocyanates was found in horseradish grown in Poland. After two months of storage at 0°C the content of isothiocyanates in horseradish was lower by about 20% compared to fresh roots, while in processed horseradish stored at 10 i 20°C the concentration of isothiocyanates was lower by about 50%.
